I would like to know if there's an option on whatsapp that lets you unseen messages that you already saw so that the person who sent it won't know when you saw it.

yes, you need to force stop the app then your partner unable to see your seen mark after your read. but at first you need to force stop the app like go setting----> apps----->whatsapp------> force stop
