A variety of winter squash that grows on a vine, butternut squash is also known as butternut pumpkin or gramma in Australia and New Zealand. Its flavor is comparable to that of a pumpkin—sweet and nutty.

It features orange meaty pulp with tan-yellow peel and a compartment of seeds at the blossom end. It becomes richer and sweeter as it ripens, turning an ever-deeper shade of orange. In addition to being a source of vitamin A, it is a rich source of fiber, vitamin C, magnesium, and potassium.

Butternut squash is a vegetable that may be roasted, sautéed, toasted, puréed for soups like squash soup, or mashed to be used in casseroles, breads, muffins, and pies even though it is technically a fruit (particularly, a berry).
