Basically it's just as they get newer, Android 5 is only just coming out of development so is only available on certain devices and you will find flagship models from the manurfactureres will update to the newest version. There usually isnt a huge difference, a lot of the changes are 'under the hood' so usually in performance and battery life. Sometime theres the odd cosmetic change, but usually different companies personalise android differently, so say a Samsung will look a bit different to a HTC but still be running the same operating system
