it means the capability of a touchscreen to recognize two or more points of contact on the surface concurrently.

it doesn't work on the resistive type of touchscreens. Apple has as first to lauch the multi touch capability in his iPhones.

Multi-touch is a method of input on a touchscreen that allows two or more fingers to be used on the screen at one time. Like  Apple's iPhone is famous for introducing multi-touch to the cell phone world by using it to allow pinching and stretching gestures on the screen to control zooming. Multi-touch is something typically associated with capacitive touchscreen displays rather than with more common resistive touchscreen displays smiley

Multi-touch is functionality allowing a touch screen, track pad, etc… to register multiple points of contact made on the surface simultaneously.
