basically, it's for two reasons. The first is so that it doesn't interfere with the plane's instruments. If it does, there is a great chance the readings on these instruments may be misinterpreted.
The second reason is so that the passengers can pay adequate attention to flight safety demonstrations and hear other vital information without getting distracted.
