Persian lime (Citrus latifolia), often called seedless lime, Bearss lime, and Tahiti lime, is a hybrid citrus fruit species that is only grown in cultivated environments. The key lime (Citrus aurantiifolia) and lemon (Citrus limon) are triploids that were crossed to create the Persian lime.
The tree has almost no thorns. The fruit has a diameter of about 6 cm (2.4 in), frequently has slightly nipped ends, and is typically sold green, however it becomes yellow as it ripens completely. Given that Persian cuisine frequently uses dried versions of ingredients, it is also commonly available.
Compared to the key lime, it is bigger, has thicker skin, and less powerful citrus aromatics (Citrus aurantifolia). The bigger size, lack of seeds, hardiness, lack of thorns on the bushes, and longer fruit shelf life of the Persian lime over the key lime are advantages in commercial agriculture. They lack the bitterness that contributes to the key lime's distinctive flavor and are less acidic than key limes.
