Raw yellow Mayocoba beans

Medium-sized and native to Peru, mayocoba beans are a light yellow or white tint. Canary beans (also known as canario beans), Mexican yellow beans, and Peruvian beans (also known as Peruano beans) are some of the names given to mayocoba beans in English and Spanish.

In addition to having a moderate flavor and a creamy texture on their own, cooked beans are a good vehicle for absorbing the flavors of other ingredients. Any mild-flavored legume, such as pinto beans, black beans, cranberry beans, great northern beans, white beans, cannellini beans (also known as white kidney beans), or even lentils, can be easily replaced with them. Mayocoba beans are naturally low in fat and cholesterol, abundant in protein, fiber, and iron.
